Celebrate #NationalPancakeDay with These Low-Sugar Options

So, I’m a little late to this party, but apparently today is National Pancake Day! When I think “low-sugar,” I definitely don’t think “PANCAKES!” but it turns out the two are not mutually exclusive.

Today, I’m sharing three tried-and-true low-sugar pancake recipes that I found on Pinterest plus a delicious pumpkin variation that can be applied to any of the three. If you want to see more of the delicious things I pin, click the Pinterest icon at the top or bottom of this page to follow me!

1. From HurryTheFoodUp.com: Cottage Cheese Pancakes


I hate cottage cheese because of the texture, but because of the way these come together, it isn’t a problem at all. These pancakes are delicious and pair beautifully with fresh fruit for a tasty, satisfying breakfast without a lot of added sugar.

2. From Ambitious Kitchen: Oatmeal Blueberry Yogurt Pancakes


Depending on what kind of yogurt you use, these are quite a bit sweeter than the cottage cheese pancakes shown above, so they won’t require syrup. I’ve made them with plain Greek yogurt instead of sweetened Siggi’s, and they are delicious either way.

3. From RecipeByPhoto.com: 3 Ingredient Pancakes

This recipe is so simple you don’t even need to write it down, but it can be a little tricky to execute. You’ll definitely need a good non-stick pan and the patience to wait until the bottoms are set before flipping. Otherwise, if you aren’t careful, you’ll end up with banana-flavored scrambled eggs, and that’s not nearly as fun.

BONUS: Pumpkin Spice Variation

Are you a big fan of the PSL? (That’s Pumpkin Spice Latte, for those not in the know *wink*) Just happen to have an extra half cup of pumpkin puree lying around?

You’re in luck! I’ve made pumpkin versions of all three of the recipes above.

  • For Recipe 1 (Cottage Cheese Pancakes), replace 1/4 cup of the cottage cheese with 1/4 cup pumpkin and sprinkle in some cinnamon, ginger, nutmeg, and cloves.
  • For Recipe 2 (Oatmeal Blueberry Yogurt), replace the 1/2 mashed banana with about 1/4 cup of pumpkin puree. Omit blueberries and add cinnamon, ginger, nutmeg, and cloves. BONUS: Use Trader Joe’s Pumpkin Greek Yogurt instead of plain. It isn’t sugar free, but it IS delicious.
  • For Recipe 3, replace the banana with about 1/2 cup of pumpkin puree. Add ginger, nutmeg, and cloves.

Finish with a drizzle of pure maple syrup if desired. At least it’s not refined sugar, right?

P.S. If it’s not National Pancake Day (or if you’re feeling rebellious), these recipes work reasonably well in the waffle iron, too. Just make sure to use some butter or coconut oil to stop them from sticking. 🙂
