In Southern California, our weather is pretty great year-round, but I definitely get tired of the heat. The highest temperature predicted this week is 86 degrees, so we are getting close to soup-and-scarf weather, and I couldn’t be more excited. I can’t wait to dive spoon-first into a steaming bowl of soup!

1. Chicken Pot Pie Soup and Parmesan Drop Biscuits from Cooking Classy
This recipe has a long ingredient list, but it’s simple to make and so, so delicious. I love chicken pot pie in theory, but this comes together faster and makes for better leftovers (goodbye, soggy crust!).
2. Tomato Bisque from 100 Days of Real Food
This recipe is basically the only reason I ever use my immersion blender. It is a fabulous accompaniment to grilled cheese and, as Lisa Leake details on her blog, it freezes surprisingly well. I may never eat store-bought canned tomato soup again.
3. Healthified Crock Pot Chicken Tortilla Soup from The Skinny Fork
This one is lighter than the previous two, and best of all, it’s a slow cooker recipe, which means you can start it in the morning and come home to a warm, yummy-smelling house. 10/10 would recommend.
